Vegan Potato Carrot Cheese
This healthy veggie cheese may be used on pizza, with nachos, or other creative ways!
2 potatoes
2 carrots
1/3 cup nutritional yeast
1/3 cup tapioca starch
1 tbsp lemon juice
1 tbsp sweet paprika
Cut the potatoes and carrots into small pieces and boil until soft.
Drain but save some of the water for later.
Blend everything in a food processor gradually adding water until smooth.
Pour the mixture into a pan and heat until thicker and gooey, adding water as needed.
Easy! Inexpensive!
